Ingredients

– 1 pre-made 9-inch pie crust

– 24 ounces cream cheese, softened

– 1 cup granulated sugar

– 3 large eggs

– 1 teaspoon vanilla extract

– 1 1/2 cups fresh or frozen cranberries

Instructions

1. Preheat the oven to 350°F (175°C).

2. In a large bowl, beat the cream cheese with a hand mixer until smooth and creamy, about 2-3 minutes.

3. Add the granulated sugar and beat until well combined, about 1 minute.

4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

5. Fold in the fresh or frozen cranberries.

6. Pour the cheesecake filling into the pre-made pie crust.

7. Bake for 45-55 minutes, or until the center is almost set. The edges should be lightly golden.

8. Allow the pie to cool completely on a wire rack, then refrigerate for at least 4 hours or overnight before serving.

Notes

For a festive touch, top the chilled pie with a dusting of powdered sugar or a dollop of whipped cream. This pie can be made a day in advance and stored in the refrigerator until ready to serve.
