Description

Cranberry Orange Chicken is a delightful and easy-to-make dish that combines the tart flavor of cranberries with the bright, citrusy notes of orange. The chicken is seared to perfection and then simmered in a flavorful sauce, resulting in a comforting and satisfying meal.


Ingredients

– 1.5 pounds chicken breasts, boneless and skinless

– 1 cup fresh cranberries

– 1/2 cup orange juice

– 2 tablespoons brown sugar

– 1 tablespoon Dijon mustard

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. Season the chicken breasts with salt and pepper.

2. Heat a large skillet over medium-high heat and add a tablespoon of oil. Sear the chicken for 3-4 minutes per side until golden brown.

3. Remove the chicken from the skillet and set aside.

4. In the same skillet, add the cranberries, orange juice, brown sugar, Dijon mustard, garlic, and thyme. Stir to combine.

5. Return the chicken to the skillet and simmer for 15-20 minutes, or until the chicken is cooked through and the sauce has thickened.

6. Serve the Cranberry Orange Chicken immediately, garnished with fresh thyme if desired.
