Description
This creamy cucumber salad is a refreshing and delightful side dish that’s perfect for summer cookouts, potlucks, and light meals. The cool, creamy dressing perfectly complements the crunchy, fresh cucumbers for a flavor that’s both indulgent and light.
Ingredients
– 3 medium cucumbers, thinly sliced
– 1 cup sour cream
– 1/2 cup mayonnaise
– 2 tablespoons white vinegar
– 1 tablespoon fresh dill, chopped
– 1 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the sliced cucumbers, sour cream, mayonnaise, vinegar, dill, salt, and pepper. Stir until the cucumbers are evenly coated in the creamy dressing.
2. Cover and refrigerate for at least 30 minutes, up to 2 hours, to allow the flavors to meld.
3. Serve chilled, garnished with extra fresh dill if desired.
Notes
For best results, use English or Persian cucumbers, which have thinner skins and fewer seeds. You can also add thinly sliced red onion or a splash of lemon juice to the dressing for extra flavor. This salad keeps well in the fridge for up to 3 days.
