Description
Crockpot Fire Korean Beef Tacos are a delicious, easy-to-make weeknight meal featuring tender, shredded beef in a bold, sweet and spicy sauce, wrapped in warm tortillas and topped with fresh garnishes.
Ingredients
– 2 pounds beef chuck roast
– 1/2 cup soy sauce
– 1/4 cup brown sugar
– 3 cloves garlic, minced
– 1 tablespoon grated fresh ginger
– 2 tablespoons sriracha (or other hot sauce)
– 12 small tortillas (corn or flour)
– 1 bunch green onions, sliced
– 1/2 cup chopped fresh cilantro
Instructions
1. Place the beef chuck roast in a crockpot.
2. In a small bowl, whisk together the soy sauce, brown sugar, garlic, ginger, and sriracha. Pour the sauce over the beef.
3. Cook on low for 7-8 hours, until the beef is very tender.
4. Remove the beef from the crockpot and shred it using two forks.
5. Return the shredded beef to the crockpot and stir to coat it in the sauce.
6. Serve the crockpot Korean beef in the tortillas, topped with green onions and cilantro.
Notes
You can adjust the spice level by adding more or less sriracha to the sauce. The beef can also be served over rice or in lettuce wraps for a low-carb option.
