Description

Ingredients

– 4 boneless, skinless chicken breasts

– 1 cup plain breadcrumbs

– 1/2 cup grated Parmesan cheese

– 2 eggs, beaten

– 1 cup marinara sauce

– 1 cup shredded mozzarella cheese

– 2 tablespoons olive oil

– 1/4 teaspoon salt

– 1/4 teaspoon black pepper

– 2 tablespoons fresh basil, chopped (optional)


Instructions

1. Preheat oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.

2. In a shallow bowl, combine the breadcrumbs and Parmesan cheese. In a separate shallow bowl, beat the eggs.

3. Dip the chicken breasts into the beaten eggs, then dredge them in the breadcrumb mixture, pressing to adhere.

4. Place the breaded chicken on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.

5. Bake for 20-25 minutes, until the chicken is cooked through and the breading is golden brown.

6. Remove the chicken from the oven and top each piece with a spoonful of marinara sauce and a handful of shredded mozzarella cheese.

7. Return the chicken to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.

8. Garnish with fresh chopped basil (if using) and serve immediately.

Notes

For a crispier breading, you can refrigerate the breaded chicken for 30 minutes before baking. To make ahead, you can prepare the breaded chicken and refrigerate it until ready to bake. This dish also pairs well with a side of pasta or roasted vegetables.
