Ingredients
– 1 1/2 cups all-purpose flour
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup unsalted butter, softened
– 3/4 cup brown sugar
– 1 large egg
– 1 teaspoon vanilla extract
– 1/2 cup creamy peanut butter
– 1 medium ripe banana, mashed
– 1/2 cup semi-sweet chocolate chips
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with paper liners.
2. In a medium bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
3. In a large bowl, cream the softened butter and brown sugar together until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until well combined.
4. Stir in the peanut butter and mashed banana until fully incorporated.
5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chocolate chips.
6. Scoop the dough into the prepared muffin tin, filling each cup about 3/4 full.
7. Bake for 8-10 minutes, or until the edges are lightly golden and the centers are still slightly soft.
8. Allow the cookie cups to cool in the muffin tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For best results, use ripe, spotty bananas for maximum flavor. You can also drizzle a bit of melted peanut butter or chocolate over the tops of the baked cookie cups for an extra indulgent touch.
