Description

This Farmer’s Market Chicken Taco Salad is a light and refreshing summer meal that combines juicy grilled chicken, crisp seasonal veggies, and zesty taco flavors for a satisfying and nutritious dish.


Ingredients

– 1 pound boneless, skinless chicken breasts

– 1 tablespoon taco seasoning

– 1 head romaine lettuce, chopped

– 1 cup cherry tomatoes, halved

– 1 avocado, diced

– 1 red onion, thinly sliced

– 1 cup cooked black beans, rinsed and drained

– 1 cup grilled corn kernels

– 1 cup tortilla strips

– 1/4 cup fresh cilantro, chopped

– 2 tablespoons lime juice

– 2 tablespoons olive oil

– Salt and pepper to taste


Instructions

1. Preheat grill to medium-high heat. Season the chicken breasts with the taco seasoning and grill for 6-8 minutes per side, or until cooked through. Allow to cool, then slice or shred the chicken.

2. In a large salad bowl, combine the chopped romaine lettuce, cherry tomatoes, avocado, red onion, black beans, grilled corn, and tortilla strips.

3. Add the grilled chicken to the salad.

4. In a small bowl, whisk together the lime juice and olive oil. Season with salt and pepper.

5. Drizzle the dressing over the salad and toss gently to coat.

6. Sprinkle the fresh cilantro over the top.

7. Serve immediately and enjoy!

Notes

This salad is best enjoyed fresh, but any leftovers can be stored in an airtight container in the refrigerator for up to 2 days. The dressing can be made ahead of time and stored separately.
