Description

Fideo Soup is a delicious and easy-to-make Mexican soup that’s packed with flavor. This homemade version is ready in just 30 minutes and is sure to become a new family favorite.


Ingredients

– 8 oz fideo noodles (or thin vermicelli noodles)

– 4 cups chicken or vegetable broth

– 1 (15 oz) can diced tomatoes

– 1 onion, diced

– 3 garlic cloves, minced

– 1 tsp ground cumin

– 1 tsp dried oregano

– Salt and pepper to taste

– Chopped fresh cilantro, for garnish

– Lime wedges, for serving


Instructions

1. 1. In a large pot or Dutch oven, toast the fideo noodles over medium heat, stirring frequently, until golden brown, about 3-5 minutes.

2. 2. Add the broth, diced tomatoes, onion, garlic, cumin, and oregano. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the noodles are tender.

3. 3. Season with salt and pepper to taste.

4. 4. Serve the fideo soup hot, garnished with fresh cilantro and a squeeze of lime juice.

Notes

– For a heartier meal, you can add cooked chicken or shrimp to the soup.

– Fideo noodles can be found in the Hispanic/Latin section of most grocery stores, or you can use thin vermicelli noodles as a substitute.
