Description

This French Onion Chicken Orzo Casserole is a comforting and flavorful baked dish that combines tender chicken, caramelized onions, and savory herbs in a creamy orzo casserole, topped with melty cheese.


Ingredients

– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces

– 2 large onions, thinly sliced

– 3 cloves garlic, minced

– 2 cups uncooked orzo pasta

– 2 cups chicken broth

– 1 cup heavy cream

– 1 cup shredded Parmesan cheese

– 2 tablespoons chopped fresh thyme

– 1 tablespoon chopped fresh rosemary

– 1 teaspoon salt

– 1/2 teaspoon black pepper


Instructions

1. Preheat the oven to 375°F.

2. In a large skillet over medium-high heat, caramelize the sliced onions until golden brown, about 15-20 minutes. Add the minced garlic and cook for an additional 2 minutes.

3. In a large bowl, combine the cooked onion mixture, chicken, orzo, chicken broth, heavy cream, Parmesan cheese, thyme, rosemary, salt, and pepper. Mix well.

4. Transfer the mixture to a 9×13-inch baking dish and spread evenly.

5. Bake for 30-35 minutes, or until the chicken is cooked through and the orzo is tender.

6. Remove from the oven and let sit for 5 minutes before serving.

Notes

This casserole can be made ahead and refrigerated for up to 3 days. To reheat, cover with foil and bake at 375°F for 20-25 minutes, or until heated through. You can also freeze the unbaked casserole for up to 3 months. Thaw in the refrigerator before baking.
