Ingredients
3 large yellow onions, thinly sliced
2 tablespoons unsalted butter
1 tablespoon olive oil
4 cups beef broth
2 cups chicken broth
1/2 cup dry white wine
2 teaspoons fresh thyme leaves
1 bay leaf
1 baguette, sliced
2 cups shredded Gruyère cheese
Instructions
1. In a large pot or Dutch oven, melt the butter with the olive oil over medium-low heat. Add the sliced onions and cook, stirring occasionally, for 30-40 minutes until deeply caramelized and golden brown.
2. Deglaze the pan with the white wine, scraping up any browned bits from the bottom. Simmer for 2-3 minutes until the wine has mostly evaporated.
3. Add the beef broth, chicken broth, thyme, and bay leaf. Bring to a simmer and cook for 10 minutes, allowing the flavors to meld.
4. Preheat the oven to 400°F. Arrange the baguette slices on a baking sheet and toast for 5-7 minutes until golden brown.
5. Ladle the hot soup into oven-safe bowls or ramekins. Top each serving with a toasted baguette slice and a generous layer of shredded Gruyère cheese.
6. Transfer the bowls to the oven and bake for 5-7 minutes, until the cheese is melted and bubbly.
7. Serve the French onion soup hot, garnished with additional fresh thyme if desired.
Notes
For a deeper flavor, caramelize the onions for up to 1 hour. You can also use a combination of Gruyère and Parmesan cheeses. Leftover soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
