Description

This French Potato Salad is a creamy and flavorful side dish, perfect for picnics, barbecues, or any gathering. With fresh herbs and a tangy dressing, it’s a crowd-pleaser!


Ingredients

– 2 pounds small red potatoes

– 1 cup mayonnaise

– 2 tablespoons Dijon mustard

– 1 tablespoon apple cider vinegar

– 1/2 cup chopped green onions

– 1/4 cup fresh parsley, chopped

– Salt and pepper to taste


Instructions

1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.

2. In a large bowl, mix together the mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper.

3. Cut the cooled potatoes into bite-sized pieces and add to the bowl with the dressing.

4. Fold in the green onions and parsley until evenly coated.

5. Chill for at least 30 minutes before serving.

Notes

For added flavor, you can include diced celery or hard-boiled eggs. Store leftovers in an airtight container in the fridge for up to 3 days.
