– 2 lbs baby potatoes, halved
– 4 tbsp unsalted butter
– 4 cloves garlic, minced
– 1 tsp dried thyme
– 1 tsp paprika
– Salt and pepper to taste

4. – Return the seared beef cubes to the skillet and toss to coat in the garlic butter sauce. Cook for an additional 2-3 minutes.
5. – Remove from heat and stir in the dried thyme and paprika. Season with salt and pepper to taste.
6. – Serve the garlic butter beef bites immediately, garnished with chopped parsley, alongside the roasted potatoes.
Notes
For best results, use high-quality beef sirloin. You can also substitute baby Yukon Gold potatoes if preferred. The garlic butter sauce can be made ahead of time and reheated when ready to serve.
