Description

This Garlicky Cabbage Soup is a flavorful and comforting dish that’s perfect for chilly days. Made with tender cabbage, aromatic garlic, and a savory broth, it’s a quick and easy weeknight meal that’s sure to warm you up.


Ingredients

– 2 tablespoons olive oil

– 1 medium onion, diced

– 6 cloves garlic, minced

– 1 head of green cabbage, thinly sliced

– 4 cups low-sodium chicken or vegetable broth

– 2 cups water

– 1 teaspoon dried thyme

– 1/2 teaspoon dried rosemary

– 1/4 teaspoon crushed red pepper flakes (optional)

– Salt and black pepper to taste

– Chopped parsley for garnish (optional)


Instructions

1. In a large pot or Dutch oven, heat the olive oil over medium heat.

2. Add the diced onion and minced garlic. Cook for 2-3 minutes, stirring frequently, until the onion is translucent and the garlic is fragrant.

3. Add the thinly sliced cabbage to the pot. Cook for 5-7 minutes, stirring occasionally, until the cabbage starts to soften.

4. Pour in the chicken or vegetable broth and water. Stir in the dried thyme, dried rosemary, and crushed red pepper flakes (if using). Season with salt and black pepper to taste.

5. Bring the soup to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the cabbage is very tender.

6. Taste and adjust seasoning as needed.

7. Serve the Garlicky Cabbage Soup hot, garnished with chopped parsley if desired. Enjoy!

Notes

This soup can be made vegetarian by using vegetable broth instead of chicken broth. You can also add diced potatoes or carrots for extra heartiness. For a creamier texture, stir in a tablespoon or two of heavy cream or sour cream at the end.
