Description

Genovese Pasta Salad is a vibrant and flavorful dish that perfectly captures the essence of Italian cuisine. This refreshing salad features bowtie pasta tossed with juicy cherry tomatoes, fragrant basil, and a creamy, zesty dressing, all topped with a sprinkle of Parmesan cheese.

Ingredients

– 1 pound bowtie pasta

– 2 cups cherry tomatoes, halved

– 1 cup fresh basil leaves, shredded

– 1/2 cup grated Parmesan cheese

– 1/4 cup olive oil

– 3 tablespoons lemon juice

– 2 tablespoons red wine vinegar

– 1 teaspoon Dijon mustard

– 1 clove garlic, minced

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

Instructions

1. Cook the bowtie pasta according to package instructions. Drain and rinse with cold water to cool.

2. In a large bowl, combine the cooked and cooled pasta, cherry tomatoes, and shredded basil leaves.

3. In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper to make the dressing.

4. Pour the dressing over the pasta salad and toss gently to coat.

5. Sprinkle the grated Parmesan cheese over the top and gently mix to incorporate.

6. Serve chilled or at room temperature. Enjoy!

Notes

– For a creamier texture, you can add a tablespoon of mayonnaise or sour cream to the dressing.

– Try adding other vegetables like diced cucumber, red onion, or bell peppers for extra color and crunch.

– For a protein boost, you can add grilled chicken or shrimp to the salad.
