Description

Ingredients

– 2 pounds small waxy potatoes

– 1 large cucumber

– 1 small red onion

– 1/2 cup sour cream

– 1/4 cup mayonnaise

– 2 tablespoons apple cider vinegar

– 1 tablespoon sugar

– Salt and pepper to taste

– Fresh dill, for garnish


Instructions

1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.

2. Slice the cooled potatoes into bite-sized pieces.

3. Thinly slice the cucumber and onion.

4. In a bowl, mix sour cream, mayonnaise, apple cider vinegar, sugar, salt, and pepper to create the dressing.

5. Combine the potatoes, cucumber, and onion in a large bowl.

6. Pour the dressing over the salad and toss gently to coat.

7. Garnish with fresh dill and serve chilled.

Notes

For a lighter version, use Greek yogurt instead of sour cream. This salad can be stored in the refrigerator for up to 3 days.
