– 16 Medjool dates, pitted

– 4 ounces goat cheese, softened

– 8 slices bacon, cut in half

2. Slice each date in half lengthwise, being careful not to cut all the way through. Stuff each date half with about 1 teaspoon of the softened goat cheese.
