Ingredients

– 1 pound cheese tortellini, cooked according to package instructions

– 1 pint cherry tomatoes, halved

– 1 cucumber, diced

– 1/2 cup crumbled feta cheese

– 1/4 cup pitted kalamata olives, halved

– 2 tablespoons fresh parsley, chopped

– 2 tablespoons fresh oregano, chopped

– 2 tablespoons lemon juice

– 1 tablespoon red wine vinegar

– 2 tablespoons olive oil

– 1 teaspoon Dijon mustard

– 1 garlic clove, minced

– Salt and pepper to taste


Instructions

1. In a large bowl, combine the cooked and drained tortellini, cherry tomatoes, diced cucumber, crumbled feta, and halved olives.

2. In a small bowl, whisk together the lemon juice, red wine vinegar, olive oil, Dijon mustard, and minced garlic. Season with salt and pepper to taste.
