Ingredients
– 1 pound boneless, skinless chicken breasts
– 2 bell peppers, sliced
– 1 red onion, sliced
– 8 cups mixed greens
– 2 tablespoons olive oil
– 1 tablespoon fajita seasoning
– 1/4 cup lime juice
– 2 tablespoons sour cream
– 1 tablespoon honey
– Salt and pepper to taste
Instructions
1. Preheat grill to medium-high heat.
2. In a large bowl, toss the chicken with 1 tablespoon of olive oil and the fajita seasoning. Grill the chicken for 6-8 minutes per side, until cooked through. Let rest for 5 minutes, then slice into strips.
3. In the same bowl, toss the bell peppers and onion with the remaining 1 tablespoon of olive oil. Grill for 4-6 minutes, turning occasionally, until charred and tender.
4. In a small bowl, whisk together the lime juice, sour cream, and honey. Season with salt and pepper.
5. Arrange the mixed greens on a large serving platter. Top with the grilled chicken, bell peppers, and onions. Drizzle the dressing over the top and serve immediately.
Notes
For a heartier meal, you can add cooked rice or quinoa to the salad. Customize the vegetables based on your preferences.
