Description

Grilled Corn Cowboy Caviar is a refreshing and zesty dip that combines sweet grilled corn with fresh vegetables, making it a perfect addition to any gathering or summer barbecue.


Ingredients

– 2 ears of corn, grilled and kernels removed

– 1 cup cherry tomatoes, diced

– 1/2 cup red onion, finely chopped

– 1 green bell pepper, diced

– 1/2 cup black beans, drained and rinsed

– 1/4 cup fresh cilantro, chopped

– 1 lime, juiced

– 1 teaspoon cumin

– Salt and pepper to taste


Instructions

1. Grill the corn on medium-high heat for about 10 minutes, turning occasionally until charred.

2. Once cooled, remove the kernels from the cobs and place them in a mixing bowl.

3. Add diced cherry tomatoes, red onion, green bell pepper, black beans, and cilantro to the bowl.

4. Squeeze lime juice over the mixture and add cumin, salt, and pepper.

5. Toss everything together until well combined and serve chilled with tortilla chips.

Notes
