Ingredients
– 1 pound diced ham
– 2 cans (15 oz each) white beans, drained and rinsed
– 3 carrots, peeled and diced
– 2 celery stalks, diced
– 1 onion, diced
– 3 garlic cloves, minced
– 6 cups chicken or vegetable broth
– 2 bay leaves
– 1 teaspoon dried thyme
– 1/2 teaspoon smoked paprika
– Salt and pepper to taste
– Chopped parsley for garnish
Instructions
1. In a large pot or Dutch oven, sauté the diced ham over medium heat until lightly browned, about 5 minutes.
2. Add the diced carrots, celery, and onion to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
3. Stir in the minced garlic and cook for 1 minute until fragrant.
4. Pour in the broth and add the white beans, bay leaves, thyme, and smoked paprika. Bring the soup to a boil.
5. Reduce the heat to low and let the soup simmer for 20-25 minutes, until the flavors have melded and the vegetables are tender.
6. Season with salt and pepper to taste.
7. Ladle the soup into bowls and garnish with chopped parsley.
Notes
