Ingredients
– 2 tablespoons olive oil
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 garlic cloves, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried parsley
– 6 cups low-sodium chicken broth
– 2 cups shredded cooked chicken
– 8 ounces egg noodles
– Salt and pepper to taste
Instructions
1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.
2. – Add the garlic, thyme, and parsley, and cook for 1 minute until fragrant.
3. – Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
4. – Add the shredded chicken and egg noodles, and cook for an additional 8-10 minutes until the noodles are tender.
5. – Season with salt and pepper to taste.
6. – Ladle the soup into bowls and serve hot.
Notes
– For a heartier soup, add 1 cup of frozen peas or green beans during the last 5 minutes of cooking.
– Use rotisserie chicken or leftover cooked chicken to save time.
