These Heavenly Summer Peach Bars are a quick and easy dessert that captures the essence of the season. With a buttery crumb topping and a sweet, juicy peach filling, they’re the perfect treat for picnics, potlucks, or anytime you need a delicious, crowd-pleasing dessert.
Ingredients
– 2 cups all-purpose flour
– 1 cup unsalted butter, softened
– 1 cup granulated sugar
– 1 teaspoon baking powder
– 1/4 teaspoon salt
– 4 cups sliced fresh peaches (about 6-8 medium peaches)
– 1/4 cup brown sugar
– 1 tablespoon cornstarch
– 1 teaspoon ground cinnamon
Instructions
1. – Preheat oven to 375°F. Grease an 8×8-inch baking pan.
2. – In a large bowl, combine the flour, butter, granulated sugar, baking powder, and salt. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
3. – Press half of the crumb mixture into the prepared baking pan.
4. – In a separate bowl, toss the sliced peaches with the brown sugar, cornstarch, and cinnamon.
5. – Spread the peach mixture evenly over the crumb base.
6. – Sprinkle the remaining crumb mixture over the top of the peaches.
7. – Bake for 30-35 minutes, or until the top is golden brown and the peaches are bubbling.
8. – Allow to cool for at least 15 minutes before cutting and serving.
Notes
For a creamier texture, serve the Heavenly Summer Peach Bars warm with a scoop of vanilla ice cream. You can also use a combination of peaches and nectarines for a fun twist.
