Ingredients
– 8 oz penne pasta
– 1 lb boneless, skinless chicken breasts
– 1 cup diced bell peppers
– 1 cup diced red onion
– 1 cup halved cherry tomatoes
– 1/2 cup bbq sauce
– 1/4 cup olive oil
– 2 tbsp red wine vinegar
– 1 tsp Dijon mustard
– Salt and pepper to taste
Instructions
1. – Cook the penne pasta according to package instructions. Drain and set aside.
2. – Grill or bake the chicken breasts until cooked through. Shred or dice the chicken.
3. – In a large bowl, combine the cooked pasta, shredded chicken, diced bell peppers, diced red onion, and halved cherry tomatoes.
4. – In a small bowl, whisk together the bbq sauce, olive oil, red wine vinegar, and Dijon mustard. Season with salt and pepper.
5. – Pour the dressing over the pasta salad and toss to coat everything evenly.
6. – Serve immediately or refrigerate until ready to serve.
Notes
