– 4 cups vegetable or chicken broth

– 2 cups diced tomatoes

– 1 cup uncooked elbow macaroni

– 1 cup frozen peas

– Salt and pepper to taste


Instructions

1. – Heat the olive oil in a large pot over medium heat.

2. – Add the onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. – Stir in the garlic, thyme, and oregano. Cook for 1 minute until fragrant.

4. – Pour in the broth and diced tomatoes. Bring the mixture to a boil.

5. – Add the macaroni and peas. Reduce heat to medium-low and simmer for 10-12 minutes, or until the pasta is tender.

6. – Season with salt and pepper to taste.
