Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 1/4 cup honey
– 2 tablespoons chipotle peppers in adobo sauce, finely chopped
– 2 tablespoons soy sauce
– 1 tablespoon lime juice
– 2 cloves garlic, minced
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground cumin
– 1/4 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the chicken, honey, chipotle peppers, soy sauce, lime juice, garlic, smoked paprika, cumin, salt, and pepper. Mix well to coat the chicken.
2. Heat a large skillet over medium-high heat. Add the chicken mixture and cook, stirring occasionally, for 12-15 minutes or until the chicken is cooked through and the sauce has thickened.
3. Serve the Honey Chipotle Chicken immediately, garnished with chopped cilantro or green onions if desired. Enjoy!
Notes
