Ingredients
– 2 cups all-purpose flour
– 1 tsp baking soda
– 1/2 tsp salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 1/2 cup honey
– 1 large egg
– 1 tsp vanilla extract
– 2 tbsp culinary lavender, finely chopped
– 1/2 tsp ground cinnamon
Instructions
1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. In a bowl, whisk together the flour, baking soda, salt, and cinnamon.
3. In a separate bowl, cream the softened butter and sugar until light and fluffy.
4. Add in the honey, egg, and vanilla extract, mixing until well combined.
5. Gradually add the dry ingredients to the wet mixture, followed by the chopped lavender, and stir until just combined.
6. Drop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
7. Bake for 10-12 minutes or until the edges are lightly golden.
8. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Store cookies in an airtight container at room temperature for up to one week. For a stronger lavender flavor, increase the amount of culinary lavender slightly.
