Ingredients
– 3 cups (375g) all-purpose flour
– 1 tablespoon (10g) active dry yeast
– 1/4 cup (50g) granulated sugar
– 1 teaspoon ground cardamom
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon salt
– 1/2 cup (120ml) warm milk
– 1/4 cup (60g) unsalted butter, melted
– 2 large eggs
– 1 teaspoon vanilla extract
– 1 egg, beaten with 1 tablespoon water (for egg wash)
– Powdered sugar for dusting
Instructions
1. In a large bowl, combine the flour, yeast, sugar, cardamom, cinnamon, nutmeg, and salt.
2. In a separate bowl, whisk together the warm milk, melted butter, eggs, and vanilla.
3. Pour the wet ingredients into the dry ingredients and mix until a shaggy dough forms.
4. Turn the dough onto a lightly floured surface and knead for about 10 minutes, until the dough becomes smooth and elastic.
5. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
6. Punch down the dough to release any air bubbles. Divide the dough into 12 equal pieces and shape each piece into a round bun.
7. Place the buns on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
8. Preheat the oven to 375°F (190°C).
9. Using a sharp knife or kitchen shears, cut a deep cross into the top of each bun.
10. Brush the buns with the egg wash.
11. Bake for 18-20 minutes, or until the buns are golden brown.
12. Remove from the oven and let cool slightly. Dust the buns with powdered sugar before serving.
Notes
For a more pronounced cardamom flavor, increase the amount of ground cardamom to 1 1/2 teaspoons. You can also substitute the cardamom with ground cinnamon or other warm spices like allspice or cloves.
