Ingredients

– 2 cups mashed potatoes (about 1 pound potatoes)

– 1 1/4 cups all-purpose flour, plus more for dusting

– 1/4 cup unsalted butter, melted, plus more for cooking

– 1 teaspoon salt

– 1/4 teaspoon baking powder


Instructions

1. In a large bowl, combine the mashed potatoes, 1 1/4 cups flour, 1/4 cup melted butter, salt, and baking powder. Mix until a soft dough forms.

2. Turn the dough out onto a lightly floured surface and knead for 2-3 minutes until smooth and elastic.

3. Divide the dough into 8 equal pieces. Roll each piece into a round, flat disk about 1/4 inch thick.

4. Heat a large skillet over medium heat and add a small pat of butter. Cook the farls in batches for 2-3 minutes per side, or until golden brown and crispy.

5. Serve the Irish Potato Farls warm, with additional melted butter, if desired.

Notes
