Description

Italian Dressing Cowboy Caviar is a vibrant and zesty dip that combines fresh vegetables, beans, and a tangy Italian dressing. It’s perfect for parties or as a healthy snack option.


Ingredients

1 can black beans, drained and rinsed

1 can corn, drained

1 red bell pepper, diced

1 green bell pepper, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 cup Italian dressing

Salt and pepper to taste


Instructions

1. In a large mixing bowl, combine the black beans, corn, red bell pepper, green bell pepper, cherry tomatoes, red onion, and cilantro.

2. Pour the Italian dressing over the mixture and gently toss to combine.

3. Season with salt and pepper to taste.

4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

5. Serve chilled with tortilla chips or fresh veggies.

Notes

For an extra kick, add diced jalapeños or a splash of hot sauce. This dip can be made a day ahead and stored in the refrigerator.
