Ingredients
– 2 pounds boneless, skinless chicken breasts
– 1 head romaine lettuce, chopped
– 2 cups cherry tomatoes, halved
– 1 cup sliced cucumber
– 1/2 cup sliced red onion
– 1/2 cup sliced black olives
– 1/2 cup sliced pepperoncini
– 1 cup creamy Italian dressing
– 2 tablespoons chopped fresh basil
Instructions
1. In a large pot, bring a pot of salted water to a boil. Add the chicken breasts and cook for 12-15 minutes, or until cooked through. Remove from the water and let cool.
2. Once cooled, shred or dice the chicken.
3. In a large salad bowl, combine the shredded chicken, chopped romaine lettuce, cherry tomatoes, cucumber, red onion, black olives, and pepperoncini.
4. Drizzle the creamy Italian dressing over the salad and toss gently to coat.
5. Garnish with the chopped fresh basil.
6. Serve chilled or at room temperature.
Notes
For a heartier meal, you can add cooked pasta or croutons to the salad. You can also adjust the dressing amount to your desired consistency.
