Description

Ingredients

– 6 lemons, zested and juiced

– 2 cups granulated sugar

– 1/2 cup water


Instructions

1. In a medium saucepan, combine the lemon juice, lemon zest, sugar, and water. Bring the mixture to a boil over medium-high heat, stirring frequently to dissolve the sugar.

2. Once boiling, reduce the heat to medium-low and simmer, stirring occasionally, for 20-25 minutes or until the jam has thickened to your desired consistency.

3. Remove the pan from the heat and let the jam cool slightly. Transfer the jam to sterilized jars or containers, and refrigerate for up to 2 weeks.

Notes

For a smoother texture, you can blend the jam with an immersion blender before transferring to jars. The jam can also be canned for longer-term storage. Adjust the amount of sugar to your personal taste preference.
