Ingredients
– 1 cup all-purpose flour
– 1 cup cornmeal
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1/2 cup unsalted butter, melted
– 1/2 cup granulated sugar
– 2 large eggs
– 1/2 cup milk
– 2 jalapeños, seeded and finely chopped
– 8 ounces cream cheese, softened
– 4 ounces goat cheese, softened
– 6 slices bacon, cooked and crumbled
Instructions
1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, cornmeal, baking powder, and salt.
3. In a separate bowl, combine the melted butter, sugar, eggs, and milk. Whisk until well combined.
4. Add the wet ingredients to the dry ingredients and stir just until combined. Fold in the chopped jalapeños.
5. Using a small cookie scoop or tablespoon, portion the batter onto the prepared baking sheet, spacing them about 2 inches apart.
6. Bake for 12-15 minutes, or until the cornbread whoopie pies are golden brown and a toothpick inserted into the center comes out clean.
7. Allow the whoopie pies to cool completely on the baking sheet.
8. In a medium bowl, beat the cream cheese and goat cheese until smooth and creamy. Fold in the crumbled bacon.
9. Using a piping bag or a spoon, fill the center of each whoopie pie with the bacon-goat cheese filling.
10. Serve the Jalapeno Cornbread Whoopie Pies with Bacon Goat Cheese immediately, or refrigerate until ready to serve.
Notes
For a spicier version, you can leave the seeds in the jalapeños. If you prefer a less spicy option, use only 1 jalapeño or substitute it with a milder pepper. These whoopie pies can be stored in the refrigerator for up to 3 days.
