Description
This Kielbasa Black Bean Skillet is a quick and easy one-pan meal that’s packed with smoky sausage, tender black beans, and flavorful spices. It’s the perfect hearty and satisfying dinner for busy weeknights.
Ingredients
– 1 pound kielbasa sausage, sliced into rounds
– 1 onion, diced
– 1 red bell pepper, diced
– 3 cloves garlic, minced
– 2 (15-ounce) cans black beans, drained and rinsed
– 1 cup chicken or vegetable broth
– 1 teaspoon cumin
– 1 teaspoon chili powder
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper (optional)
– Salt and black pepper to taste
– Chopped fresh parsley, for garnish
Instructions
1. Heat a large skillet over medium-high heat. Add the sliced kielbasa and cook for 3-4 minutes, stirring occasionally, until lightly browned.
2. Add the diced onion and bell pepper to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
3. Stir in the minced garlic and cook for 1 minute, until fragrant.
4. Add the drained and rinsed black beans, chicken or vegetable broth, cumin, chili powder, smoked paprika, and cayenne pepper (if using). Season with salt and black pepper to taste.
5. Bring the mixture to a simmer and let it cook for 10-15 minutes, stirring occasionally, until the sauce has thickened slightly.
6. Serve the Kielbasa Black Bean Skillet hot, garnished with chopped fresh parsley. Enjoy!
Notes
This dish can be easily customized – feel free to add extra vegetables, swap out the kielbasa for another type of sausage, or adjust the spices to your preference. For a creamier texture, you can also stir in a bit of heavy cream or sour cream at the end.
