Ingredients
– 2 ¾ cups all-purpose flour
– 1 teaspoon baking powder
– ½ teaspoon baking soda
– ½ teaspoon salt
– 1 cup unsalted butter, softened
– 1 ½ cups granulated sugar

– 1 tablespoon lemon zest
– 2 tablespoons fresh lemon juice
– 1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
3. In a separate large bowl, beat butter and sugar until light and fluffy.
4. Add the egg, lemon zest, lemon juice, and vanilla extract, mixing until well combined.
5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Scoop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them apart.
7. Bake for 10-12 minutes until the edges are lightly golden.
8. Allow to cool on the baking sheets for a few minutes before transferring to a wire rack.
