Description
These Lobster Mac and Cheese Bites are the ultimate in indulgence – creamy, cheesy, and packed with tender chunks of fresh lobster. They make the perfect appetizer or snack for any occasion.
Ingredients
– 8 ounces elbow macaroni
– 3 tablespoons unsalted butter
– 3 tablespoons all-purpose flour
– 2 cups whole milk
– 2 cups shredded cheddar cheese
– 8 ounces cooked lobster meat, chopped
– 1 cup panko breadcrumbs
– 1/2 teaspoon smoked paprika
– 1/4 teaspoon cayenne pepper
– Salt and pepper to taste
Instructions
1. Cook the macaroni according to package instructions until al dente. Drain and set aside.
2. In a medium saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly.
3. Gradually whisk in the milk and cook, stirring frequently, until the sauce thickens, about 5 minutes.
4. Remove the sauce from heat and stir in the shredded cheddar cheese until melted and smooth.
5. Fold the cooked macaroni and chopped lobster meat into the cheese sauce until well combined.
6. Scoop the mac and cheese mixture by the tablespoonful and gently form into bite-sized balls.
7. In a shallow bowl, combine the panko breadcrumbs, smoked paprika, and cayenne. Roll the mac and cheese bites in the breadcrumb mixture until fully coated.
8. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat. Fry the breaded bites in batches for 2-3 minutes per batch, until golden brown.
9. Transfer the fried bites to a paper towel-lined plate to drain excess oil. Season with salt and pepper.
10. Serve the Lobster Mac and Cheese Bites warm, with a side of creamy cheese dipping sauce if desired.
Notes
These bites can be prepared ahead of time and refrigerated until ready to fry. They also freeze well for up to 3 months.
