Ingredients
– 3 medium cucumbers, thinly sliced
– 1 teaspoon salt
– 1 tablespoon olive oil
– 1 tablespoon rice vinegar
– 1 teaspoon chili powder
– 1 teaspoon garlic powder
– 1 tablespoon chopped fresh mint
– 1 tablespoon chopped fresh cilantro
– 1 teaspoon black sesame seeds (optional)
Instructions
1. In a large bowl, toss the sliced cucumbers with salt and let sit for 10 minutes to draw out excess moisture.
2. Drain the cucumbers and gently pat dry with paper towels.
3. In a separate bowl, whisk together olive oil, rice vinegar, chili powder, and garlic powder.
4. Pour the dressing over the cucumbers and toss to combine.
5. Add the chopped mint and cilantro, mixing well.
6. Sprinkle with black sesame seeds if using, and serve immediately or chill for 15 minutes for enhanced flavors.
Notes
