Ingredients
– 4 medium apples, peeled, cored, and cut into 1-inch chunks
– 6 medium carrots, peeled and cut into 1-inch pieces
– 1/4 cup pure maple syrup
– 2 tablespoons Dijon mustard
– 2 tablespoons olive oil
– 1 teaspoon dried thyme
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, combine the chopped apples and carrots.
3. In a small bowl, whisk together the maple syrup, Dijon mustard, olive oil, thyme, salt, and pepper.
4. Pour the maple-Dijon mixture over the apples and carrots and toss to coat evenly.

Notes
