Description

Ingredients

– 2 cups mashed potatoes

– 1 1/2 cups all-purpose flour

– 1/4 cup unsalted butter, melted

– 1 teaspoon salt

– 2 tablespoons chopped fresh parsley


Instructions

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. In a large mixing bowl, combine the mashed potatoes, all-purpose flour, melted butter, and salt. Mix until a soft dough forms.

3. Turn the dough out onto a lightly floured surface and knead it briefly, just until it comes together.

4. Divide the dough into 8 equal pieces. Roll each piece into a thin, round flatbread, about 1/4-inch thick.

5. Arrange the flatbreads on the prepared baking sheet. Bake for 12-15 minutes, or until the edges are golden brown and crispy.

6. Remove the mashed potato flatbreads from the oven and sprinkle with the chopped fresh parsley.
