Description

Mediterranean Cowboy Caviar is a delightful and colorful dip that combines fresh vegetables, beans, and spices. Perfect for parties or a healthy snack, it’s easy to prepare and bursting with flavor!


Ingredients

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 cup cherry tomatoes, quartered

1/2 red onion, finely chopped

1/2 bell pepper, diced

1/4 cup fresh cilantro, chopped

1/2 teaspoon cumin

Juice of 1 lime

Salt and pepper to taste

Tortilla chips for serving


Instructions

1. In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red onion, bell pepper, and cilantro.

2. Add the cumin, lime juice, and season with salt and pepper.

3. Gently toss all the ingredients together until well combined.

4. Taste and adjust seasoning if necessary.

5. Serve immediately with tortilla chips, or refrigerate for 30 minutes to allow flavors to meld.

Notes

For a spicy kick, add diced jalapeños or a splash of hot sauce. This dip can be made ahead of time and stored in the fridge for up to 3 days.
