This Mexican Lasagna Recipe is a delectable fusion of classic lasagna and Tex-Mex flavors. Layers of soft tortillas, seasoned ground beef, and melted cheeses come together in a comforting and satisfying casserole that’s perfect for family dinners or entertaining.
Ingredients
– 1 lb ground beef
– 1 onion, diced
– 3 cloves garlic, minced
– 1 tbsp chili powder
– 1 tsp cumin
– 1 tsp oregano
– Salt and pepper to taste
– 12 corn or flour tortillas
– 2 cans (15 oz each) diced tomatoes
– 2 cups shredded cheddar cheese
– 2 cups shredded Monterey Jack cheese
– Chopped fresh cilantro for garnish
Instructions
1. 1. Preheat oven to 375°F.
2. 2. In a large skillet, cook the ground beef over medium heat until browned and crumbled. Drain excess fat.
3. 3. Add the diced onion and garlic to the skillet and cook for 2-3 minutes until softened.
4. 4. Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute to toast the spices.
5. 5. Spread a thin layer of the ground beef mixture in the bottom of a 9×13 inch baking dish.
6. 6. Top with a layer of tortillas, overlapping slightly.
7. 7. Spread half of the remaining ground beef mixture over the tortillas, then top with half of the diced tomatoes and half of the shredded cheeses.
8. 8. Repeat the layers of tortillas, ground beef, tomatoes, and cheeses.
9. 9. Bake for 30-35 minutes, or until the cheese is melted and bubbly.
10. 10. Let stand for 5-10 minutes before serving.
11. 11. Garnish with chopped fresh cilantro.
Notes
For a spicier version, add diced jalapeños or use pepper jack cheese. You can also use a combination of ground beef and Italian sausage for extra flavor. Leftovers can be stored in the refrigerator for up to 4 days.
