Ingredients
– 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 tablespoons zaatar spice blend
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons olive oil
– 1 cup plain Greek yogurt
– 2 cloves garlic, minced
– 1 tablespoon lemon juice
– 2 tablespoons chopped fresh parsley
Instructions
1. In a large bowl, toss the chicken pieces with the zaatar spice blend, salt, and black pepper until evenly coated.
2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, or until the chicken is lightly browned on all sides.
3. In a small bowl, whisk together the Greek yogurt, garlic, and lemon juice.
4. Reduce the heat to low and pour the yogurt mixture over the chicken. Gently stir to coat the chicken evenly.
5. Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
6. Remove from heat and stir in the chopped parsley.
7. Serve the Middle Eastern Zaatar Yogurt Chicken immediately, garnished with additional parsley if desired.
Notes
