Ingredients
– 1 pound pork tenderloin, thinly sliced
– 2 cups shredded cabbage
– 1 cup julienned carrots
– 8 ounces sliced mushrooms
– 3 green onions, sliced
– 2 cloves garlic, minced
– 1 tablespoon grated ginger
– 2 tablespoons soy sauce
– 1 tablespoon rice vinegar
– 1 tablespoon sesame oil
– 1 teaspoon cornstarch
– Salt and pepper to taste
Instructions
1. In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat.
2. Add the pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove the pork from the pan and set aside.
3. In the same pan, add the remaining 1 tablespoon of oil. Stir in the cabbage, carrots, mushrooms, and green onions. Cook for 3-4 minutes, stirring occasionally, until the vegetables are tender-crisp.
4. Add the garlic and ginger to the pan and cook for 1 minute, until fragrant.
5. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and cornstarch. Pour the sauce into the pan and stir to coat the vegetables.
6. Add the cooked pork back to the pan and toss everything together until heated through, about 2-3 minutes.
7. Serve the Moo Shu Pork immediately, with steamed rice or warm tortillas on the side.
