Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 1 tablespoon olive oil
– 1 onion, diced
– 3 cloves garlic, minced
– 1 teaspoon ground cumin
– 1 teaspoon paprika
– 1 teaspoon ground coriander
– 1/2 teaspoon ground cinnamon
– 1/4 teaspoon cayenne pepper
– 1 cup long-grain white rice
– 2 cups chicken broth
– 1 cup diced tomatoes
– 1/4 cup chopped fresh parsley
– Salt and pepper to taste
Instructions
1. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove the chicken from the skillet and set aside.
2. In the same skillet, sauté the onion until translucent, about 3-4 minutes. Add the garlic and cook for an additional minute, until fragrant.
3. Stir in the cumin, paprika, coriander, cinnamon, and cayenne. Cook for 1 minute, until the spices are fragrant.
4. Add the rice and chicken broth to the skillet. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
5. Fluff the rice with a fork and stir in the cooked chicken, diced tomatoes, and chopped parsley. Season with salt and pepper to taste.
6. Serve the Moroccan Chicken Rice hot, garnished with additional parsley if desired. Enjoy!
Notes
For extra flavor, try adding a splash of lemon juice or a sprinkle of chopped toasted almonds or raisins on top. This dish also pairs well with a fresh salad or warm pita bread.
