Description

Warm up with this comforting and flavorful Moroccan Lentil Soup. Made with aromatic spices, tender lentils, and a variety of vegetables, this nourishing soup is a delicious and healthy option for a quick weeknight meal.


Ingredients

– 1 tablespoon olive oil

– 1 onion, diced

– 3 cloves garlic, minced

– 1 tablespoon ground cumin

– 1 teaspoon ground coriander

– 1 teaspoon ground ginger

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon cayenne pepper (optional)

– 1 cup brown lentils, rinsed

– 4 cups vegetable or chicken broth

– 2 carrots, peeled and diced

– 1 (14.5 oz) can diced tomatoes

– 1 teaspoon salt

– 1/4 teaspoon black pepper

– Chopped cilantro or parsley for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for 5 minutes until translucent.

2. Stir in the minced garlic, cumin, coriander, ginger, cinnamon, and cayenne pepper (if using). Cook for 1 minute, until fragrant.

3. Add the rinsed lentils, broth, diced carrots, and diced tomatoes. Season with salt and pepper.

4. Bring the soup to a boil, then reduce heat and let it simmer for 20-25 minutes, or until the lentils are tender.

5. Taste and adjust seasoning as needed. Ladle the soup into bowls and garnish with chopped cilantro or parsley.

Notes

This soup can be made ahead and reheated. It also freezes well for up to 3 months.
