Ingredients
– 1 pound boneless, skinless chicken breasts, diced
– 2 teaspoons ground cumin
– 1 teaspoon ground cinnamon
– 1 teaspoon smoked paprika
– 1/2 teaspoon ground ginger
– 1/4 teaspoon cayenne pepper
– 1/4 cup fresh cilantro, chopped
– 1/4 cup fresh parsley, chopped
– 2 tablespoons olive oil
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 12 sheets phyllo dough
– 2 tablespoons melted butter
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, combine the diced chicken, cumin, cinnamon, smoked paprika, ginger, cayenne pepper, cilantro, parsley, olive oil, salt, and black pepper. Mix well to coat the chicken with the spices.
3. Lay a sheet of phyllo dough on a clean work surface and brush it lightly with melted butter. Place a heaping tablespoon of the chicken mixture near the bottom third of the dough, then fold the bottom corner over the filling, followed by the sides, and continue rolling up tightly to form a triangular pastry.
4. Place the briouat seam-side down on a parchment-lined baking sheet. Repeat with the remaining phyllo sheets and chicken filling.
5. Bake the Moroccan Spiced Chicken Briouats for 18-20 minutes, or until the pastry is golden brown and crispy.
6. Serve the warm briouats immediately, garnished with additional chopped cilantro or parsley if desired.
Notes
These Moroccan Spiced Chicken Briouats can be prepared in advance and frozen. To reheat, bake the frozen briouats at 400°F (200°C) for 12-15 minutes until heated through and crispy.
