Ingredients
– 1 pound chicken tenderloins
– 1 cup buttermilk
– 1/2 cup hot sauce
– 1 1/2 cups all-purpose flour
– 1 tablespoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1 teaspoon cayenne pepper
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– Vegetable oil for frying
Instructions
1. In a large bowl, combine the chicken tenders, buttermilk, and hot sauce. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
2. In a shallow bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
3. Remove the chicken tenders from the buttermilk mixture one at a time, allowing any excess to drip off. Dredge the tenders in the seasoned flour, pressing to help the breading adhere.
4. In a large skillet or Dutch oven, heat 1-2 inches of vegetable oil to 350°F. Fry the chicken tenders in batches for 2-3 minutes per side, or until golden brown and cooked through.
5. Drain the fried chicken tenders on a paper towel-lined plate. Serve hot, drizzled with additional hot sauce if desired.
Notes
For extra crispy tenders, you can double dip the chicken in the buttermilk and flour mixture. Adjust the amount of cayenne pepper to your desired level of heat. Leftover tenders can be stored in the refrigerator for up to 3 days and reheated in the oven or air fryer.
