Ingredients
1 can (15 oz) black-eyed peas, drained and rinsed
1 cup diced bell peppers (red, green, and yellow)
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
1/4 cup olive oil
1/4 cup red wine vinegar
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional)
Instructions
1. In a large mixing bowl, combine the black-eyed peas, diced bell peppers, diced red onion, and chopped cilantro.
2. In a separate bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, black pepper, and cayenne pepper (if using).
3. Pour the dressing over the black-eyed pea mixture and toss gently to combine.
4. Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
5. Serve chilled with tortilla chips or pita bread.
Notes
