Description

These crispy, golden pineapple fritters are a delightful tropical treat. Featuring sweet pineapple pieces enveloped in a light, fluffy batter, they’re perfect for snacking, parties, or any time you need a taste of the islands.


Ingredients

– 1 cup all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 2 large eggs

– 1/3 cup granulated sugar

– 1 cup fresh pineapple, finely diced

– Vegetable oil for frying

– Powdered sugar for dusting (optional)


Instructions

1. In a medium bowl, whisk together the flour, baking powder, and salt.

2. In a separate bowl, beat the eggs and sugar until light and fluffy.

3. Gently fold the egg mixture into the dry ingredients until just combined. Fold in the diced pineapple.

4. In a large skillet, heat 1/2 inch of vegetable oil over medium-high heat.

5. Scoop heaping tablespoons of the batter into the hot oil and fry for 2-3 minutes per side, until golden brown.

6. Drain the fritters on a paper towel-lined plate.

7. Dust the warm fritters with powdered sugar, if desired, and serve immediately.

Notes

For extra flavor, try adding a teaspoon of vanilla extract or a pinch of ground cinnamon to the batter. These fritters are best enjoyed fresh, but leftovers can be stored in an airtight container for up to 3 days.
