Ingredients

– 1 (3.4 oz) package instant pistachio pudding mix

– 1 cup milk

– 1/2 cup vegetable oil

– 2 eggs

– 2 cups all-purpose flour

– 1 cup granulated sugar

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1/2 cup chopped pistachios (plus more for topping)


Instructions

1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan.

2. In a large bowl, whisk together the pudding mix, milk, oil, and eggs until well combined.

3. In a separate bowl, mix the flour, sugar, baking powder, and salt.

4. Gradually fold the dry ingredients into the wet ingredients until just combined. Fold in the 1/2 cup of chopped pistachios.

5. Pour the batter into the prepared loaf pan and top with additional chopped pistachios.

6. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.

7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a richer flavor, try using salted pistachios. You can also add a simple glaze or icing to the top of the bread. Store the Pistachio Pudding Bread in an airtight container at room temperature for up to 4 days.
