Ingredients

– 1 cup uncooked orzo pasta

– 1 red bell pepper, diced

– 1 yellow bell pepper, diced

– 1 cup cherry tomatoes, halved

– 1 cucumber, diced

– 1/2 red onion, thinly sliced

– 1/4 cup fresh parsley, chopped

– 1/4 cup fresh basil, chopped

– 2 tablespoons olive oil

– 2 tablespoons white wine vinegar

– 1 tablespoon lemon juice

– 1 teaspoon Dijon mustard

– 1 garlic clove, minced

– Salt and pepper to taste


Instructions

1. Cook the orzo pasta according to package instructions. Drain and rinse with cold water to cool.

2. In a large bowl, combine the cooked orzo, diced bell peppers, cherry tomatoes, diced cucumber, and sliced red onion.

3. In a small bowl, whisk together the olive oil, white wine vinegar, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper to taste.

4. Pour the dressing over the orzo salad and toss to coat evenly.

5. Sprinkle the chopped parsley and basil over the top and gently mix to incorporate.

Notes
